The CoP is the Coefficient of Performance. It is the ratio of energy input to output. For example, a unit with a COP of 5, when the input power is 1kw and it will provide 5kw heating capacity output. The higher the CoP the more efficient the AWHP will operate.
Some AWHP as well as Air-to-Air heat pumps use inverter technology that will modulate the fan and compressor to lower the output when the temperatures get closer to the thermostat setpoint.
